- Unsalted butter (to grease your springform)
- 900g cream cheese, room temperature
- 300g sugar
- 6 large eggs
- 475ml heavy cream
- 1 tsp. kosher salt
- 1 tsp. vanilla extract
- 45g all-purpose flour
- Sherry (for serving; optional)
Beat the cream cheese and sugar until fluffy, then add the eggs one after the other slowly then add the cream and whisk for 3 minutes.
Sift the flour in slowly and whisk on medium low speed until everything’s incorporated.

Pour in the mixture and bake at a preheated oven at 180° C for 55 to 65 minutes or until the top becomes slightly burned/caramelised.
