Basque Burnt Cheesecake

Crustless, Decadent, & Delicious! Our Basque Burnt Cheesecake is a guaranteed foolproof recipe made to impress!


  • Unsalted butter (to grease your springform)
  • 900g cream cheese, room temperature
  • 300g sugar
  • 6 large eggs
  • 475ml heavy cream
  • tsp. kosher salt
  • tsp. vanilla extract
  • 45g all-purpose flour
  • Sherry (for serving; optional)


Beat the cream cheese and sugar until fluffy, then add the eggs one after the other slowly then add the cream and whisk for 3 minutes. 

Sift the flour in slowly and whisk on medium low speed until everything’s incorporated.

Pour in the mixture and bake at a preheated oven at 180° C for 55 to 65 minutes or until the top becomes slightly burned/caramelised.

Enjoy it with a glass of Sherry or Prosecco. Simply cover it with beeskin L or beeskin XL afterwards and keep fresh in the fridge for a week
