Our Zucchini Bruschetta is a quick and easy mid-week meal, perfect for when you're in a rush or want to surprise your friends with a delish snack
Ingredients
- 2 Zucchinis
- 1 handful cherry tomatoes
- 50g Pancetta
- 2 cloves garlic
- 20ml olive oil
- Salt and Pepper to taste
Recipe
- Put garlic cloves and olive oil in a pan on medium heat to infuse the oil with the garlic flavour
- Cut up the Pancetta and cook for 3 minutes to release its fat
- Chop up Zucchini and tomatoes and cook down for 7 minutes
That’s it! Spread it on toasted Ciabatta or enjoy it as a snack dish
