Zucchini Bruschetta

Our Zucchini Bruschetta is a quick and easy mid-week meal, perfect for when you're in a rush or want to surprise your friends with a delish snack


  • 2 Zucchinis
  • 1 handful cherry tomatoes
  • 50g Pancetta
  • 2 cloves garlic
  • 20ml olive oil
  • Salt and Pepper to taste


  • Put garlic cloves and olive oil in a pan on medium heat to infuse the oil with the garlic flavour
  • Cut up the Pancetta and cook for 3 minutes to release its fat
  • Chop up Zucchini and tomatoes and cook down for 7 minutes

   That’s it! Spread it on toasted Ciabatta or enjoy it as a snack dish
